Lisa Faulkner's Thai curry and coconut chicken skewers
TV presenter and actress Lisa Faulkner, join forces with some of her famous female friends to cook, but more importantly to celebrate the vital roles female loved ones have played in our lives in the past 18 months and how we should treasure these always!
Thai curry and coconut chicken skewers
Serves 4
Prep 10 minutes, plus marinating time
Cook 15 minutes, approximately
Ingredients
2 tbsp red curry paste (you can use green or yellow if you prefer)
400ml can good quality coconut milk
1 tsp salt
4 boneless, skinless chicken breasts, cut into 3 cm chunks
Flatbreads, pea shoots, tomatoes, cucumber, lime to serve
4-6 bamboo skewers, soaked in water for half an hour
Method
1. In a medium bowl mix the curry paste with the coconut milk and the salt. Add the chicken and leave to marinate for a few hours or overnight.
2. When marinated, thread the chicken on the skewers and place on a hot barbecue or griddle. Leave to caramelise for 3-4 minutes a side, turning each time for even cooking. Ensure the chicken is thoroughly cooked through.
3. When the chicken is lovely and charred and golden, remove from the heat and serve with flatbreads and the delicious crunchy salad of pea shoots, tomatoes and cucumber. Sprinkle with lime to serve.
