Lisa Faulkner's roasted vegetable soup and cheesy soda bread
Lisa Faulkner's inviting us into her kitchen - and today she's joined by her sister to cook one of their family's favourite winter recipes, a chunky veg soup with cheesy bread. Yum!
Roasted vegetable soup and cheesy soda bread
Serves 2
Ingredients
Roasted vegetable soup
1 onion chopped
2 leeks chopped
2-3 carrots sliced
2-3 celery sticks chopped
1 sweet potato chopped or ¼ butternut squash cubed
1 courgette sliced
1 clove garlic smashed
1 -2 tbsp olive oil
1 litre vegetable stock
1 tsp marmite
1 tbsp white miso paste
Salt and pepper
Fresh dill
Cheesy soda bread
275g plain flour
200 whole meal flour
1 tsp bicarbonate of soda
1 pinch salt
A handful of grated cheese
300ml yogurt or buttermilk
150 ml milk
1tsp honey
Some sprigs of rosemary
Method
Roasted vegetable soup
1. Preheat oven to 180
2. Place the veg in a large roasting tin, toss with the olive oil and salt and pepper and cook in the oven for about 30 minutes
3. Pour over the stock mix in the marmite and miso and cover with foil. Place back in the oven for a further 20 minutes or so.
4. Season to taste and stir through chopped fresh dill.
5. Serve with soda bread.
Cheesy soda bread
1. Preheat oven to 200.
2. Mix dry ingredients together then wet then combine. Mix to a dough. Turn out onto floured surface and roll into a ball. Place rosemary on baking tray put bread on top.
3. Cut a cross in the centre of the bread bake 30-40 minutes.
