Lisa Faulkner's herb crusted cod

As the January blues creep in, Lisa Faulkner delivers good mood food that will keep the whole family happy.

Ingredients:4 cod fillets about 350g each1 packet of sage and onion stuffing mixZest of a lemon2 tbsp chopped fresh dill or parsley2 tbsp mayonnaise1 tbsp Dijon mustard

Method:1. Preheat the oven to 200C2. Put the cod on a lined baking tray and rub with a little olive oil.3. Mix the lemon zest , herbs, mayo and Dijon together and spread over the cod then sprinkle over the stuffing mix onto the cod. Drizzle with olive oil.4. Bake for about 15/20 minutes depending on the thickness of your fish.5. Serve with a spring onion mash and peas.

Lisa's top tip: Make your meals go further by making any leftovers into fishcakes.
