Lisa Faulkner's festive fish pie
Lisa Faulkner invites us into her kitchen where she is showing us her family's favourite Christmas Eve meal - a festive fish pie.
Fish Pie

Ingredients:1 packet ready-rolled puff pastry1 egg, beaten, for glazing2 shallots, finely chopped250ml white wine150ml crème fraiche 150ml double cream1 dessert spoon wholegrain mustard2 salmon fillets, skinned and chopped1 smoked haddock fillet, skinned and chopped12 raw shelled king prawns1 tablespoon fresh tarragon, finely chopped1 tablespoon fresh parsley, finely choppedSalt and pepper
Method:
Preheat oven to 200C/gas 6.
Use Christmas cutters or circles to cut out shapes from the pastry. Glaze with beaten egg, put on a greased baking sheet and bake for 20 minutes.
Heat the shallots and wine in a saucepan and reduce by half.
Add the crème fraiche and double cream and let it bubble away until it coats the back of a spoon.
Stir in the mustard, salmon, haddock and prawns, add salt and pepper to taste and cook for about 5 minutes.
Stir through the parsley and tarragon. Spoon into dishes or bowls and top with the pastry shapes.
Tip:This fish is speedy to prepare, make it even quicker by using a pack of fish and seafood mix.
