Mac & Cheese
Ingredients
500g any small shape pasta you like, cooked
113g unsalted butter
1 white onion
1 tsp Dijon mustard
75g plain flour
3 1/2 cup./ 830mls milk
450g shredded cheddar cheese, 2 tbls reserved for topping
450g shredded Gouda cheese, 2 tbls reserved for topping
226g mozzarella ball
120g plain or panko breadcrumbs2 tsp Italian seasoning
Salt and pepper, to taste
Method
1. Preheat the oven to 180c2. Melt butter in a saute pan over medium heat. Add chopped onion and pinch of salt.3. Add flour slowly, stirring constantly, to thicken; add dijon mustard and milk. Season with salt and pepper. Whisk until incorporated and mixture thickens.4. Add cheeses, reserving a few tablespoons of each to top the casserole. Stir until melted.5. Add 500g cooked macaroni or any pasta you prefer.. Stir until combined.6. Pour mixture into a greased, large casserole dish.7. Add 225g mozzarella balls to top the casserole; snuggle some in the pasta and add the rest on top.8. Stir together breadcrumbs, Italian seasoning, and salt and pepper. Sprinkle about 120g breadcrumb mixture on top of the casserole.9. Add a bit more shredded cheese on top.10. Bake for 35 minutes, until bubbling and golden.

Ingredients
3 cans Heinz baked beans
3/4 cup or 150g dark brown sugar
1 white onion, chopped
1 tsp paprika
1/4 to 1/2 tsp cayenne pepper
1/4 tsp pepper
1/2 tsp onion powder
1/2 tsp garlic powder
112g of your favourite BBQ sauce
3-4 tbsp yellow mustard
114g butter, sliced into 12 pieces
Method
1. Preheat the oven to 190 c.2. Pour canned baked beans into a greased casserole dish. Add brown sugar; stir to combine. Add onion; stir.3. Add garlic powder, onion powder, pepper, paprika, BBQ sauce, and cayenne. Stir until combined.4. Drizzle yellow mustard on top in a zig-zag pattern. Stir to combine.5. Top beans with butter slices.6. Bake for 30-35 minutes at 385. The casserole is done when brown bits appear on the bubbles!
