Posh beans on toast
With the budget being announced this week, John Whaite's got a budget-beating recipe that won't break the bank. He's reverted to his student days and is doing a posh version of beans on toast!
(Serves 4)
Ingredients:
2 sausages, chopped into chunks (buy the best you can afford or use some chorizo) 1 onion, finely choppedButter for frying600g cooked butter beans1 garlic clove, grated1 heaped tsp ground coriander1 heaped tsp hot smoked paprika300ml chicken stock2 tbsp tomato pureePepper, to season
For the cheesy toast
1 clove garlic Small loaf of bread, sliced100g medium mature Cheddar cheese, gratedFreshly chopped parsley, to serve
Method:
Preheat the oven to 200C/400F/gas 6
Fry the sausages and onion in a little butter over a medium heat for 5 minutes
Add the butter beans, garlic, coriander, paprika, stock and puree. Season with pepper. Bring to the boil. If you are not using an oven-proof pan, transfer into a baking dish.
Bake in the oven, without a lid, for 30 minutes, or until the sauce is thick and the beans are silky and soft
Slice the bread. Rub the garlic clove over both sides of the bread. Toast one side under a hot grill or griddle pan. Grate the cheese over the untoasted side, and pop back under the grill for a couple of minutes until the cheese is bubbling and melted.
Serve the sausage and bean mixture on the cheesy toast and sprinkle over the chopped parsley
