Joe Wicks Feel Good Food: protein bircher muesli

All this month, Joe Wicks The Body Coach will be sharing quick and easy recipes to get you feeling energised for the new year. First up, kick start your day with Joe’s protein bircher muesli.

Serves 1

Ingredients20g porridge oats25g vanilla protein powder15g dried cranberries or raisinsPinch ground cinnamon65ml fresh apple juice1 apple, such as Cox or Braeburn, cored and grated 30g ground flaxseed1 tablespoon fat-free natural yoghurt10g chopped almonds

Method1. Combine the oats, protein powder and dried cranberries and cinnamon in a bowl. 2. Stir in the apple juice, cover and chill overnight. 3 The next morning stir through the grated apple, ground flaxseed and yoghurt. 4 Scatter over the nuts and serve.

Alternative ingredientsTo make this dairy-free, swap the natural yoghurt for 1 Tbsp of a soy or dairy free alternative, or just leave out the yoghurt altogether.

To make this nut-free, swap the almonds for 10g of seeds (pumpkin, sunflower, etc.) or you could use extra ground flaxseed.
