Ingredients:6 cm chunk of ginger root½ lemon (unwaxed)1 Golden Delicious apple

Method:Simply juice the lot and pour over ice.

Give Me Some Skin: Fresh Mint and Watermelon Salad with Ginger Nut PestoServes: 1

Ingredients for Salad:A handful of watermelon chunks½ an avocado (ripe)¼ cucumberA handful of mint leaves3 dates (pitted)¼ apple (remove core)

Ingredients for Ginger Nut Pesto: 3 tablespoons of extra virgin olive oilJuice of ½ a lemon 10 brazil nuts Large handful of basil leavesPinch of salt and pepper2cm chunk of peeled raw ginger

Method:1. Cut watermelon and avocado into cubes and place in a mixing bowl.2. Peel the cucumber and cut into cubes. Chop the spinach and dates and add the mint leaves. Cut the apple into cubes and add.3. Add all the ingredients for the ginger nut pesto into a mixing container of a hand blender and blend until smooth (about 30 seconds). Pour over salad and enjoy!
