Hot cross bun brownies recipe

Indulge with these delicious brownies that are bursting with rich flavour.

Ingredients2-3 hot cross buns, split, toasted and cooled65g unsalted butter320g dark chocolate (70% cocoa), chopped into small pieces280g golden caster sugar500g Onken Natural Set yogurt1 tsp vanilla extract2 medium free-range eggs, beaten70g plain flourPinch salt25g milk chocolate chips

Method1. Grease and line a 20cm square baking tin with parchment paper.2. Heat the oven to 180C/160C fan/gas 4.3. Halve and toast the hot cross buns and leave to cool.4. Melt the butter in a medium pan. Add dark chocolate to butter and stir until melted.5. Stir in the sugar and leave to cool slightly.6. Add the yogurt and vanilla extract to the melted chocolate mixture. Mix in the eggs.7. Stir in the flour and salt and mix until smooth without any lumps.8. Tear the toasted hot cross buns into small 2cm pieces and scatter into the base of the baking tin.9. Spoon the brownie mix into the tin and leave to stand for 10 minutes so the mixture settles over and into the hot cross buns.10. Scatter milk chocolate chips over the mixture.11. Bake for 35 – 40 minutes (do not leave them any longer – the mix needs to be gently set and wobbly in the middle).12. Leave to cool on a wire rack. Use a sharp knife to cut into squares.
