Healthy chicken tikka masala

Everyone loves a curry on a Friday night – we have a family curry night and everyone joins in with the cooking and the eating!

This is a great healthy alternative – easy too!

Ingredients

300ml of fat free Greek yoghurt4 tsp shop bought tikka masala paste.4 skinless chicken breasts4 spring onions2 tsp curry powder for an extra kick (optional)1 lemonHandful of fresh coriander

Method

  • Preheat the oven to180C/gas mark 4. In a large bowl, mix together the tikka masala paste, the fat free yogurt and the chopped coriander (saving a few sprigs for garnish)

  • Add your extra curry powder here if using

  • Add the chicken to the yoghurt mixture and coat well

  • Pop in the fridge for as long as possible, but at least 30 mins

  • When ready to cook, pop the chicken into a shallow ovenproof dish and pour over any remaining sauce

  • Bake for around 45 mins or until the chicken is cooked right through

  • Serve with a small portion of basmati and wild rice and green salad
