Fig and halloumi sunshine salad

I don’t know about you, but I can’t think of a better combination than beautiful fresh figs and gorgeous chewy halloumi cheese. Both of these ingredients remind me of when I lived in Cyprus and I used to pull figs straight from the tree.

Ingredients

6-8 figs, quartered1/2 pack halloumi cheeseHandful fresh coriander, chopped10g capers1 chicory, pulled apart ans washed3-4 tomatoes, quarteredHandful fresh chopped mint leaves

For the dressing

1 lemon3 tbsp olive oil2 tsp honeySalt/ pepper, to season1 tsp Dijon mustard

Method

  • Put the figs, coriander, capers, chicory leaves, tomatoes and mint leaves in a bowl.

  • In a jam jar, combine the dressing ingredients, place lid on and shake well to emulsify the vinaigrette. Season to taste.

  • In a frying pan, dry fry slices of halloumi until golden brown on each side.

  • Place on top of the salad and drizzle dressing over top.
