Easy-peasy no pastry quiche

Alex Hollywood makes a lighter bite of her quiches by replacing the pastry with parma ham!

Ingredients

2-3 packets Parma/Serrano ham3 eggs1 small pot of creme fraiche1 small pot of creamPinch of paprikaAsparagus spearsRed peppers1 ball grated mozzarellaChives

Method

  • Coat muffin tin with olive oil or butter to prevent sticking, then line the tray with the ham

  • Cook your vegetables (I like to griddle asparagus and red peppers)

  • Mix up quiche mix by adding together the eggs, cream, creme fraiche, paprika and cooked vegetables, then ladle the mixture into the muffin tin

  • Finish off by dropping in some torn mozzarella

  • Bake at 180 degrees for about 15/20 mins
