Easy chicken curry recipe
Dig in to a hearty chicken curry with this timeless recipe.
Serves 4Prep: 10 minutes, plus marinating timeCook: 20 minutes
Ingredients:200g Onken Natural Set Yogurt1 onion, chopped2 cloves garlic, chopped3 cm piece root ginger, chopped1 tbsp curry powder2 tbsp garam masala1 tsp turmericSalt & pepper600g boneless, skinless chicken thighs, chopped into chunks
Optional:2 handfuls spinach1 sliced red chilli, to tasteLemon wedges, to serve
Method for easy chicken curry: 1. In a medium bowl mix the yogurt with the onion, garlic, ginger, curry powder, garam masala, turmeric and salt and pepper.2. Add the chicken to the yogurt mixture, stirring to coat. If time allows leave to marinate for at least 30 minutes, or overnight.3. Pour the chicken and marinade into a large pan and cook covered over a medium heat for 20-25 minutes, or until the marinade starts to thicken slightly and the chicken is thoroughly cooked through. Remove the lid and increase the temperature to thicken the sauce if necessary.4. Stir in the spinach and chilli if using.5. If liked, serve with Naan bread and raita (see recipes below), lemon wedges.

Yogurt Naan BreadMakes 6Prep: 10 minutesCook: 15 minutes
Ingredients:175g self raising flour½ tsp baking powder2 tsp black onion seeds (optional)150g Onken Natural Yogurt
Method for Yogurt Naan Bread:1. In a medium bowl place the flour, baking powder and onion seeds (if using).2. Stir in the yogurt and mix to combine and make a sticky dough.3. Use your hands to help bring the mixture together.4. Turn the dough out onto a well floured board. Knead for about 1 minute, until smooth and a ball is formed.5. Use a knife to cut the dough into 6 even sized pieces.6. On the well floured surface pat and pull the dough into flat oval shapes (they do not have to be perfect).7. Heat a griddle or frying pan until very hot. Add the naan bread in batches cooking for 2-3 minutes each side until chargrilled, slightly puffy and cooked. Serve with the Easy Chicken Curry.

Ingredients:150g Onken Natural Set Yogurt¼ cucumber, deseeded and finely chopped2 tbsp fresh chopped mint1 tbsp fresh chopped coriander
Method for Raita:Place the yogurt in a small bowl. Fold through the cucumber, mint and coriander. Serve with the Easy Chicken Curry.
