Dr Amir's Honey Lemon Salmon
Serves 4
Ingredients:
4 tbsp olive oil
2 tbsp honey (any)
4 tbsp teriyaki sauce
Juice of 1 lemon
1 tsp chilli flakes
4 pieces of salmon (can be frozen)
Salad:
180g fresh or frozen broccoli florets (defrosted)
3 tbsp chopped walnuts
1 chopped apple (any variety)
2 tsp lemon juice
2 tsp honey mustard
Method:
For the salmon:
Preheat the oven to 180C/gas 4.
Heat the oil, honey, teriyaki sauce, lemon juice and chilli flakes in a pan for 4-5 minutes, stir to combine.
Place the salmon in individual foil pieces, drizzle with the teriyaki sauce mixture and seal the foil.
If using frozen salmon, cook for approximately 30-40 minutes. If using fresh salmon, cook for approximately 15-20 minutes.
Salad: In a bowl toss the broccoli, walnuts, apple, lemon juice and honey mustard and serve alongside the salmon.
