Aloo Gobi - Cauliflower and Potato Curry
Serves 4
Ingredients:
4 tbsp olive oil
1 white onion, chopped
3 tomatoes, chopped
2 garlic cloves crushed
1 tsp ginger powder
1 tsp chilli powder
½ tsp turmeric powder
1 tsp cumin seeds
½ tsp black onion seeds
1 cauliflower, chopped into small florets, or frozen florets will do
5 new/baby potatoes, chopped into medium chunks
Method:
Heat the oil and add the onion and cook until browned. Add 125ml water, tomatoes, garlic, ginger, chilli, turmeric, cumin seeds and black onion seeds and stir in. Cook for 3-5 minutes.
Add the cauliflower and potatoes and a further 125ml water, cover and cook on a medium heat for 10-15 minutes stirring occasionally. Remove the lid and cook for a further 10 minutes until the potatoes are cooked and the sauce is reduced. Serve with boiled basmati rice and natural yogurt.
