Dean's roast tomato gnocchi

Dean Edwards is in the kitchen with a cheap and easy family meal that costs just under £1 per portion!

Serves 4Prep: 5 minutesCook: 25 minutes

Ingredients:500g baby plum tomatoes, halvedOlive oil for drizzlingSmall bunch fresh basil8 rashers thinly sliced pancetta2 x 400g shop bought packs potato gnocchi200g tub bocconcini (baby mozzarella)

Method:

  • Place the tomatoes onto a baking tray season with salt and pepper then drizzle with some olive oil. Roast for 20 minutes in an oven set at 180C / gas 4. Take half of the tomatoes and blitz along with some fresh basil (reserve some for garnish).

  • In a large frying pan cook the pancetta until crispy then remove, add an additional splash of oil into the pan then cook the gnocchi for 2-3 minutes each side until golden and crispy

  • Place some of the sauce into the bottom of each bowl then top with some of the gnocchi; garnish with the remaining roasted tomatoes for texture, the bocconcini, crispy pancetta and some more fresh basil
