Christmas Dinner Pie

Not sure what to do with your Christmas dinner leftovers? Take all the best bits from your festive feast and combine them in one easy-to- make pie.

Serves 6-8Prep: 15 minutesCook: 40 minutes

Ingredients:1 tbsp sunflower oilKnob of butter75g sliced cooked leek, or 1 sliced onion50g plain flour650ml gravy (preferably made with wine)2 tsp Dijon mustard350g leftover turkey, shredded (or a mixture of leftover turkey and gammon)6 leftover cooked pigs in blankets or cocktail sausages (chopped if large)250g cooked leftover vegetables (carrots, Brussels sprouts, broccoli, or whatever you have left)100ml Onken Greek Style Set yogurt1 tbsp chopped parsley2 tbsp chopped sageSalt and ground black pepper3 cooked stuffing balls, halved500g leftover cooked roast potatoes, slice in half if large50g grated Cheddar cheese

To serve:100ml Onken Greek Style Set yogurt1 tsp Dijon mustard1 tbsp chopped parsley, (crispy fried sage, optional) plus a few sprigs to garnish

Method:1.Preheat the oven to 200C/gas 6.2.Heat the oil and butter in a large pan or shallow ovenproof dish. Add the leeks (or add the onion and cook until soft) and stir for 1 minute. Stir in the flour, and cook for a further 1-2 minutes. Gradually pour in the gravy stirring to mix then add the mustard.3.Fold in the turkey, pigs in blankets and vegetables. Turn off the heat then stir in the yogurt, parsley, sage and seasoning. If using a pan, transfer the mixture to an ovenproof dish.4.Arrange the stuffing balls in the centre of the casserole dish.5.Finally, arrange the potatoes around the edge of the casserole dish, leaving the stuffing balls and some of the turkey mixture exposed in the centre.6.Sprinkle most of the cheese over the potatoes, and the remainder over the turkey mixture in the centre.7.Bake for 30-35 minutes, or until hot, golden and bubbling.8.To serve mix the yogurt, mustard, parsley and black pepper.9.Remove the casserole dish from the oven. Sprinkle with a few sprigs of parsley and (crispy sage, if liked) serve with the mustard yogurt sauce.

TIPS:This recipe is just a guideline, add any quantity of leftovers and combinations of your choice, including, beef, gammon, roast parsnips, carrots, vegetables, nuts or cheese.Make a veggie version with just the leftover vegetables and add chopped nuts if liked.For crispy sage: cook a few leaves of sage in a little hot oil for a few seconds, remove and drain on paper.Replace the turkey with cooked or smoked salmon, replace the sage for chopped dill.If liked serve with braised red cabbage.
