Chilli beans on toast

Beans and pulses contain as much protein as fillet steak at a fraction of the cost, and they have many more health benefits. They are high in fibre, folate, potassium and zinc.

Ingredients

2 x 400g tin mixed beans, drained and rinsed1 red chilli, deseeded and chopped or 1 teaspoon chilli flakes1 clove garlic, peeled and crushed500g carton of tomato passata2 tsp light muscavado sugar2 tbsp balsamic vinegar4 slices wholemeal bread, toasted

Method

  • Put all the ingredients (except for the bread – obviously!) in a medium sized saucepan and over a medium heat and cook until starting to bubble.

  • Turn down the heat slightly and simmer for 4-5 minutes. Meanwhile, toast the bread – no need for butter!

  • Serve the beans on top, piping hot.
