Carrie's chocolate brownie cupcakes

Carrie Fenner has concocted these chocolately treats... which even have an edible chocolate case and an optional gooey caramel filling!

Ingredients:

115g butter200g dark chocolate (70%) 200g sugar½ tsp vanilla essence (or another flavour if you prefer*)3 eggs150g flourExtra dark chocolateWhite chocolateJar or caramel (optional)

You will also need: cupcake cases

Method:

  • Melt the butter, chocolate and sugar in a bowl and mix together. Leave to cool, then add the 3 eggs and vanilla essence or whatever flavour you are using.*

  • Then mix in the flour. Pour the mixture into your greased cake tin and place in the oven at 180 for 35-40 minutes. Once cooked, leave to cool.

  • Meanwhile you can create your edible chocolate cupcake cases,. Do this by lining the inside of a paper cupcake case with melted chocolate and leave to set.

  • Once the brownie is cooled cut off a piece and press gently into your cupcake mould (a favourite of ours is to add a layer of caramel before putting in the brownie ). Then cover the top with melted chocolate and leave to set (we prefer white chocolate if used dark for the bottom and visa versa)

*For alternative flavours I add chilli, orange zest or peppermint extract to the brownie mixture.
