John's booby cupcakes
To celebrate the launch of our Breast Mates campaign this week, John Whaite is showing us how to make these cheeky cupcakes.
Ingredients:
For the cupcakes:
225g caster sugar225g soft margarine225g sponge self-raising flour4 large eggs1tsp vanilla extractZest and juice of 1 lemon
To decorate:
250g red ready-to-roll icing250g pink ready-to-roll icingRed metallic food colour (optional)Dust metallic food paint metallic (optional)Icing sugar, to dust
For the buttercream:
50g unsalted butter, softened100g icing sugar
For the royal Icing:
1 large egg white250g icing sugarJuice of 1 lemon
Equipment:
You will need a small paintbrush, a disposable piping bag with 1cm nozzle, a small piping bag with writing nozzle and a tumbler.
Method:
Preheat the oven to 190C/170C fan/gas mark 5. Line a deep 12-hole muffin tray with cupcake/muffin cases.
To make the cakes, simply put all of the ingredients into a mixing bowl and beat to a smooth batter for about a minute. Divide between the cupcake/muffin cases and bake for 15-20 minutes, until well risen and skewer inserted into the centre comes out clean.
To decorate:
For the boobies:
For the buttercream, whisk together the butter and icing sugar until very pale and well mixed
Dust the countertop with icing sugar and roll out the icing – you don’t want it too thick or too thin. Cut out 12 discs of pink icing – using the tumbler as a cutter - and set to one side.
Fill the piping bag fitted with 1cm nozzle with the buttercream, and pipe a blob no bigger than a 1p coin into the centre of each cupcake
Take a disk of pink icing and place that on top of the blob, then gently smooth the icing on top of the cupcake, until the edges of the icing meet the edges of the cupcake/muffin case
Repeat with all 12 cupcakes
To make the cheeky nipples, roll little balls of approximately 40 percent red icing mixed with 60 percent pink icing and place those on top of the cupcakes, flattening them down into discs
Make smaller balls and place those in the centre of each disc.
For the bras:
Roll out the red icing in a little icing sugar, and cut out disks again using the tumbler
Trim each disk with the tumbler, so that it is olive shaped – these will form your bra. Dampen each bra piece with a little water on one side, then place that, water-side-down, onto the cupcakes.
Use the paintbrush to paint the bras with the colour of your choice.
For the royal icing, whisk the egg white until foamy, then whisk in the icing sugar and beat vigorously until well incorporated and smooth. Add the lemon juice, a drop at a time, just until the royal icing is pipeable, but not too runny – you may not need all of the lemon juice.
Pipe the royal icing in small blobs all the way along the top edge of the bra, then pipe little blobs to form a bra strap
