Bill's dad's spicy Thai prawns
Dad of three, Bill Granger tells us what he'll be up to on Father's Day and cooks up the perfect meal for dads everywhere - his dad's favourite dish Spicy Prawns!
Ingredients:2 tbsp mild-flavoured oil, such as sunflower20 large green prawns, shelled and deveined, with tails intact2 tbsp red curry paste1 large onion, cut into thin wedges400g pak choi, roughly chopped1 red pepper, cut into thin strips200ml coconut milk2 tbsp lime juice1 tbsp fish sauce1 tsp sugar
To serve:Egg fried rice and coriander leaves
Method:1. Heat 1 tbsp oil in a wok or large frying pan over a high heat. Add the prawns and stir-fry for 2 minutes or until they turn pink and are just cooked. Remove and set aside.
Return the wok to a high heat, add the remaining oil, followed by the curry paste, and cook, stirring, for 1 minute or until fragrant. Add the onion and pak choi and stir-fry for 2 minutes, then add the red pepper and cook for a further 1 minute.
Add the coconut milk, lime juice, fish sauce and sugar, and stir to combine. Return the prawns to the wok and cook for a further minute or until they are heated through.
Scatter over some coriander leaves and serve with egg fried rice.
