Strudel Inspired Rolls, served with Brandy Cream
John and Lisa make some of their favourite centrepieces in their Christmas Kitchen. For dessert, it’s strudel-inspired Marzipan Rolls - a deliciously simple treat.
Strudel Inspired Rolls, served with Brandy Cream
Serves: Makes x 6 rolls
Ingredients
Strudel inspired rolls
75g butter, melted
6 slices of white bread, crusts removed
60g marzipan
180g mincemeat
3 tbsp light Brown sugar
Icing sugar, to dust
Brandy cream
1 tbsp icing sugar
1 tsp vanilla essence
250ml double cream
Splash of brandy, to taste
Method
Strudel inspired rolls
1. Preheat the oven to 180c / 160 fan.
2. Use a rolling pin to roll out the bread slices until flattened.
3. Brush one side of each flattened slice with melted butter.
4. Take a small lump of marzipan and roll into a small cylinder, the same length as the width of the bread. Lay widthways across the slice of bread. Repeat for each of the 6 slices.
5. Take a small spoonful of mincemeat and spread onto the rest of the bread slice. Repeat for each of the 6 slices and then roll up to form 6 rolls.
6. Brush the tops with more melted butter and sprinkle with brown sugar.
7. Bake for about 15 minutes.
8. Dust with icing sugar and allow to cool before eating.
Brandy cream
1. Add icing sugar, vanilla and double cream to a bowl and whip to form stiff peaks.
2. Add the brandy and mix well.
