Chocolate orange bundt cake with orange drizzle syrup
Chocolate and orange are a match made in heaven, and work particularly well in this decadent bundt cake, dripping with a sticky orange drizzle. Serves 8-10
INGREDIENTS
60ml sunflower oil
300g caster sugar
4 eggs
420g self raising flour
170ml milk, plus approx 3 tbsp
2tsp baking powder
1tsp vanilla essence
2tbsp honey
2tbsp cocoa powder
2 oranges, juiced
50g caster sugar
50 ml water
Melted chocolate, for decorating
Ice cream or cream, to serve
METHOD
Preheat the oven to 160c and grease a 25 x 7.5 cm bundt tin.
Whisk the oil, sugar and eggs together and then add the milk, honey and vanilla extract.
In a bowl, combine the baking powder with the self raising flour and then spoon into the wet mix. Stir everything together until well combined.
Pour half of the mixture into the bundt tin.
Add the cocoa powder to a small bowl with approx. 3 tbsp of milk and mix well. Add this to the remaining cake batter, mix to create a chocolate batter and then pour all the way round the bundt tin, on top of the vanilla mix.
Use a knife to swirl the mixture up and down to create a marble effect.
Bake for 40 - 45 mins, allow to cool for 15 minutes, then turn out onto a wire rack.
For the syrup, add the orange juice, sugar and water to a pan and bring to the boil. Bubble away until the mixture reduces enough to coat the back of a spoon.
Use a skewer to make small holes all over the top of the cake and pour over the syrup while the cake is still warm.
Drizzle with melted chocolate and serve with cream or ice cream.
