Curried couscous

Cheryl's curried couscous puts a spicy twist on an old favourite - and it's healthy and fits right into our sugar free diet plan!

Serves: 4

Recipe1 tablespoon olive oil½ cup chopped onion½ cup diced bell pepper (any colour)¼ cup chopped celery¼ cup chopped carrot1 ½ tablespoons chopped ginger1 tea spoon curry powder1 cup whole wheat couscous2 cups fat free vegetable broth (or chicken broth)2 tablespoons chopped fresh coriander

Method1. In a nonstick sauté pan, heat oil over medium high heat

  • Add chopped vegetables and ginger and sauté for about 3 minutes

  • Add curry powder and sauté for one minute longer

  • Add couscous and broth and stir well and bring mixture to a boil

  • Reduce heat to lowest simmer and cover pan

  • After five minutes, remove from heat, uncover and fluff with a fork, stir in cilantro - serve hot
