Warm cabbage slaw
This is a perfect side dish for the Roast Pork Tenderloin with Rosemary and Garlic, but it’s also delicious with chicken, fish or even on its own.
Serves: 4
Recipe1 tablespoon olive oil1 medium yellow onion, finely chopped2 tablespoons minced or chopped garlic2 tablespoons chopped, peeled fresh ginger3 cups 210 g finely shredded red cabbage1/2 cup 55 g grated carrot1/2 cup 8 g chopped fresh coriander, without stems1 tablespoon low-sodium soy sauceSalt to taste
Method1. Heat oil in a large sauté pan over medium-high heat
Add onion and sauté until softened, but not coloured, 2 minutes
Add garlic and ginger and sauté for 1 minute longer
Add cabbage and stir-fry until cabbage is softened, about 2 minutes and remove pan from heat
Add carrot, coriander and soy sauce and stir until combined, season with salt if desired
Serve hot, warm or cold
