Sweet potato and courgette crisps
Craving crisps but trying to be good with your diet? The Lean Machines have a version that take less than ten minutes to make and have less than half the calories of a bowl of tortilla chips. The perfect snack attack!
Ingredients:
1 sweet potato1 courgetteOlive oil or low calorie cooking spray
Method:
Scrub the sweet potato and then carefully slice it as thinly as possible. If you have a mandolin, or a strong potato peeler, they’d also work.
Do exactly the same with the courgette. These can be a bit wet though, so best to dry off with a paper towel.
Pop the veggie slices on a plate, coat in olive oil or even better spray with cooking spray and pop in the microwave. Depending on the thickness of the slice, it’ll be between 4-8 minutes. You’ll know they’re done when they’re firm and brown.
