Beans 'n greens
Cheryl's beans 'n greens is a healthy alternative with plenty of veg and pulses!
Serves: 4
Recipe2 teaspoons olive oil1 small onion, diced1 teaspoon dried thyme½ teaspoon ground black pepper1 cup chopped tomatoes (or tomato sauce)2 teaspoons chopped garlic2 finely chopped anchovy filets (optional)2 15 ounce cans black beans or kidney beans, drained and rinsed(there will be about 3 cups cooked beans) 1/2 pound spinach, kale or Swiss chard, coarsely chopped3 tablespoons grated Romano cheese
Method1. In a non-stick sauté pan, sauté the onion in olive oil for 5minutes or until lightly browned
Add thyme and pepper and stir well
Add tomato, garlic and anchovies; sauté 2 minutes longer
Stir in beans and spinach and cook about 3 minutes or until greens are wilted and beans are heated through
Sprinkle with Parmesan, serve hot
