My Life on a Plate: Antony Cotton's potato hash

Jayne Middlemiss heads up our brand new series, My Life On A Plate, where she visits a selection of famous faces in their homes as they take a culinary trip down memory lane with their family and friends.

In the first episode, she visits Coronation Street's Antony Cotton and his mum Enid as they serve up a family favourite.

Antony Cotton's potato hash

Serves: 3-4

Ingredients

1tbsp Olive Oil570g Beef Stewing Steak, cut into 3cm pieces1 Onion, diced3 Maris piper Potatoes, diced2 Medium sized Carrots, diced1lt concentrated beef stock2 or 3 sprigs of Rosemary, leaves picked and finely choppedSmall bunch of Thyme, finely choppedSmall bunch of Parsley , finely chopped

Method

  • Heat the Olive Oil in a medium sized pan on a medium to a high heat, add the steak and cook till it browns, add the onions and cook for another 3 minutes till the onions start browning

  • Once the steak has browned, pour the stock into the pan and bring to the boil, once the stock is boiling, turn down the heat so the steak cooks at a gentle simmer, leave to simmer for 15 to 30 minutes

  • After 15 to 30 minutes, add the carrots, potatoes and herbs to the pot and carry on a simmer for another 2 to 3 hours, till the steak is tender

  • Once the steak is cooked, serve immediately with fried slices of black pudding and pickled red cabbage
