My Life on a Plate: Antony Cotton's potato hash
Jayne Middlemiss heads up our brand new series, My Life On A Plate, where she visits a selection of famous faces in their homes as they take a culinary trip down memory lane with their family and friends.
In the first episode, she visits Coronation Street's Antony Cotton and his mum Enid as they serve up a family favourite.
Antony Cotton's potato hash
Serves: 3-4
Ingredients
1tbsp Olive Oil570g Beef Stewing Steak, cut into 3cm pieces1 Onion, diced3 Maris piper Potatoes, diced2 Medium sized Carrots, diced1lt concentrated beef stock2 or 3 sprigs of Rosemary, leaves picked and finely choppedSmall bunch of Thyme, finely choppedSmall bunch of Parsley , finely chopped
Method
Heat the Olive Oil in a medium sized pan on a medium to a high heat, add the steak and cook till it browns, add the onions and cook for another 3 minutes till the onions start browning
Once the steak has browned, pour the stock into the pan and bring to the boil, once the stock is boiling, turn down the heat so the steak cooks at a gentle simmer, leave to simmer for 15 to 30 minutes
After 15 to 30 minutes, add the carrots, potatoes and herbs to the pot and carry on a simmer for another 2 to 3 hours, till the steak is tender
Once the steak is cooked, serve immediately with fried slices of black pudding and pickled red cabbage
