Arbi ke kabab or Jerusalem artichoke kebab

During Diwali, all those celebrating share sweets and snacks with family members and friends. So to join in with the Hindu celebrations award-winning chef Atul Kochhar is in the kitchen to show us a tasty selection of traditional treats for this Hindu holiday.

Serves: 4

Ingredients

300g Jerusalem Artichoke, boiled50g potatoes, boiledFried onionsFried cashew nutFried garlicMint leavesCoriander leavesGingerGreen chilliGheeRose petalsKewra waterRed chilli powderGaram masala powder

Oil to fry

Ingredients

  • Mix all the ingredients together and mince them in a blender to a fine paste

  • Add little bread crumbs if required and then shape into small patties

  • Pan fry them in a non-stick pan until light brown and crisp on the sides. Serve with mint raita.
