Ingredients
180g 0% fat natural Greek yogurt
180g white self raising flour
100g passata
1 clove crushed garlic
1 tablespoon, finely chopped, plus extra leaves to serve, basil, fresh
80g thinly sliced light mozzarella
100g sliced mushrooms
2 large vine, thinly sliced, tomato
4 portions, to serve, salad leaves
Method
1. Preheat the oven to 220°C, fan 200°C, gas mark 7. Put a baking sheet in the oven to heat up. Mix the yogurt and flour together until a dough forms, then roughly shape into a ball. Roll the dough out on a piece of nonstick baking paper until roughly 30cm in diameter and bake for 10 minutes.
2. Meanwhile, mix the passata, garlic and basil together and season well. Spread over the cooked dough, leaving a 2-3cm border around the edge. Arrange the mozzarella, mushrooms and tomatoes evenly over the top.
3. Reduce the heat to 200°C, fan 180°C, gas mark 6 and bake for another 8-10 minutes. Scatter with extra basil leaves and serve with a green salad.
