Tomato, chilli and honey soup
It's been just 24 hours since Phillip finished his marathon broadcast for Text Santa, so we thought he might need a bit of a boost!
If you've just finished a long shift, are exhausted and fancy something quick and simple for lunch with ingredients you'll have in your cupboard, try Jimmy Garcia's warming soup.

Ingredients
2 red onion finely chopped1 stick celery1/2 red chilli2 tbsp honey2 garlic cloves, crushed800g tinned tomatoes (nicer the better) (or fresh if poss)1tbsp dried oregano1tbsp dried thyme400ml Chicken StockSalt and pepper to tasteSplash olive oil, 50g butter
Method
Fry the onions, garlic, celery and chilli in a sauce pan with the oil and butter. Cook on a medium heat until softened.
Add the chopped tomatoes, and chicken stock, followed by the dried herbs, and allow to simmer for as long as possible, but 30mins should do it.
Add the honey, and blend with a stick blender
For the croutons
Semi dried cherry tomatoes (cut cherry tomatoes in half, sprinkle with oregano and salt, and bake at 150degrees for 40mins)
Make some bread croutons - 1 day old bread, cut in to chunks and in an oven until crispy.
