The ultimate Friday night slow cooker supper

Chilli con carne macaroni melt
Serves: 5
Ingredients
400g lean beef mince700g passata1 tbsp tomato purée3 garlic cloves, grated or choppedHandful of fresh coriander, chopped, plus extra to garnish1 red chilli, sliced1 onion, chopped1 packet of chilli con carne spice mix (or you can make your own)700ml chicken stock400g tin of kidney beans, drained and rinsed1 red pepper, chopped250g dried macaroni 120g Cheddar cheese (reduced fat if you can), gratedSalt and pepper, to taste
Method
1. Add the beef mince, passata, tomato purée, garlic, half the coriander, the chilli, onion, chilli con carne spice mix and salt and pepper to the slow cooker. Cook on high for 4 hours or low for 7-8 hours.
2. Add the stock, kidney beans, red pepper and macaroni and cook on high for a further 45 minutes. If cooking on low, you'll need to leave it for closer to 1 hour to cook the pasta.
3. Stir through half the Cheddar into the dish, top with the remainder, then garnish with the remaining coriander.
Sticky sweet and spicy chicken
Serves: 4
Ingredients
400g boneless and skinless chicken thighs, cut into small pieces 1 tbsp cornflour 6 tbsp dark soy sauce 100ml chicken stock 1 tbsp honey 1 red chilli, chopped 1 tsp hoisin sauce 1 tsp rice vinegar 1 tbsp tomato purée 1 tsp sesame oil 1 tbsp garlic purée 1½ tsp ginger purée Small grinding of black pepper, to taste 1 tsp sesame seeds and chopped spring onions, to garnish 150g cooked ramen noodles per person, to serve
Method
1. Coat the chicken thighs in the cornflour.
2. Add to the slow cooker with all the remaining ingredients, except the garnishes and the noodles. Cook on high for 4 hours or low for 6 hours.
3. Serve with the ramen noodles, garnish with the sesame seeds and spring onions and enjoy.
