The dishes you didn’t know you could make in an air fryer

The Air Fryer King Nathan Anthony is back and treating us to three of his favourite recipes, and these ones might just surprise you! Starting with his Chicken Fried Rice - yes really - then moving on to his meatball marinara sub and Yorkshire Puddings - he’ll be proving why air fryers are still one of the most versatile gadgets in your kitchen.

Recipes taken from Healthy Air Fryer: 30 Minute Meals

Chicken fried rice

Serves: 4

Ingredients

3 chicken breasts, cubedLow-calorie oil spray 1 heaped tsp curry powder 

2 x 250g packets of microwaveable rice1 tbsp hoisin sauce1 tbsp oyster sauce 1 tbsp soy sauce1 tsp sesame oil 1 tbsp garlic purée1 tsp ground ginger½ tsp Chinese 5 spice

1 carrot, grated 1 onion, finely chopped 50g frozen peas1 egg, beaten (optional)Salt, to taste 

To serve: 50g jar of curry sauceChopped spring onions

Method

1. Preheat the air fryer to 200C for 2 minutes. 

2. Spray the chicken with oil, then dust with the curry powder and season with salt. Add the chicken to the preheated air fryer and air-fry for 7-8 minutes. 

3. Cook the rice according to the packet instructions, then toss into the chicken with the hoisin, oyster and soy sauces, sesame oil, garlic purée, ground ginger and Chinese 5 spice. Toss together along with the veg, then air-fry at 200C for another 5 minutes. 

4. If you want to add an egg, do it as soon as the dish is cooked and piping hot. Stir everything through in the air fryer so the egg cooks in the heat of the other ingredients. 

5. Serve with some curry sauce and chopped spring onions.


Meatball marinara sub

Serves: 4

Ingredients

For the meatballs:300g lean beef mince300g lean pork mince 80g dried breadcrumbs1 egg, beaten1 tsp dried sage1 tsp dried thyme Salt and pepper to taste 

For the marinara sauce: 400g good-quality passata 1 tbsp garlic purée1 tbsp dried oregano 1 tsp onion granules1 tsp dried chilli flakes 

To serve: 4 sub rolls or 2 baguettes, halved 1 red onion, sliced1 red pepper, sliced 8 thin cheese slices

Method

1. Preheat the air fryer to 200C. Combine all the ingredients for the meatballs in a large mixing bowl, then form into about 20 meatballs using damp hands. Air-fry for 14-16 minutes. 

2. While they are cooking, combine all the ingredients for the marinara sauce in a bowl. Add to the air fryer drawer for the final 4 minutes of the meatball cooking time. 

3. If your air fryer has a second drawer, toast the bread rolls in it for 3 minutes. If you need to, you can just toast the bread under the grill. 

4. Once everything is ready, fill each roll with the garnishes, meatballs and sauce topped with two slices of cheese.


Yorkshire pudding steak wrap

Serves: 1

Ingredients

Low-calorie oil spray 1 egg35g plain flour50ml whole milk 1 tbsp horseradish sauce 1 tbsp mustard (preferably Dijon)5 tbsp ready-made or homemade gravy 100g leftover roast beef slices, or shop-bought Handful of pea shootsSalt and pepper, to taste

Method

1. Add an 18cm round loose-bottomed tin or silicone basket liner to your air fryer and spray with the oil spray, then preheat the air fryer to 210C for 5 minutes with the tin inside. 

2. Whisk together the egg, flour and milk in a bowl to make a smooth batter. Season with salt and pepper. Add the batter to the hot tin and air-fry for 18-20 minutes. 

3. While the pudding is cooking, mix together the horseradish and mustard in a small bowl. Warm the gravy. 

4. Remove the Yorkshire pudding from the air fryer, add the horseradish and mustard sauce, beef, gravy and pea shoots into the middle of the pudding, roll up and get stuck in.
