The Air Fryer King's family feast for under £5!
Kickstarting the week is Nathan Anthony with two of his best loved air fryer meals - Harissa chicken gyros and a cheesy garlic crumpet tear and share! Not only are they tasty, but they both cost under £5 a head.
Harissa chicken gyros
Serves: 3
Ingredients
2 tbsp harissa paste Juice of 1 lemon1 tsp paprika 1 tsp Cajun seasoning1 tsp ground cumin500g skinless, boneless chicken thighs Salt and pepper, to taste 3 supermarket gyros, flatbreads or pittasHandful of rocket3 tbsp pomegranate seedsSmall handful of pickled red onions (shop-bought if you prefer)
For the sauce: 5 heaped tbsp Greek yoghurtJuice of 1 lemon2 garlic cloves, crushed
For the homemade chips: 700g potato, cut thinly into chips
Method
1. If possible, preheat the air fryer at 200C for a few minutes before cooking.
2. Par-boil the chips, or pop them in a microwaveable bowl with a few tablespoons of water, cover with cling film and cook in the microwave for 7 minutes. Pat the chips dry, and spray with a little oil. Transfer to the air fryer and cook for 12 minutes.
3. Combine the harissa, lemon juice, paprika, Cajun seasoning, cumin and salt and pepper in a bowl, and coat the chicken in the mixture. Pop into the airfryer for 12 minutes, until cooked through.
4. Mix the yoghurt with the lemon juice and garlic to make the sauce.
5. Heat the gyros or flatbreads and assemble: stuff the breads with the chicken, chips and rocket, drizzle over the yoghurt sauce, and finally top with the pomegranate seeds and pickled red onions.
Cheesy garlic crumpet tear ‘n’ share
Serves: 4
Ingredients
6 garlic cloves, crushed100g light butterPinch of sea salt Handful of freshly chopped parsley 8 crumpets100g grated mozzarella cheese (preferably reduced-fat)
Method
1. In a bowl, combine the garlic, butter, salt and parsley.
2. Spread all of the crumpets with the garlic butter. Top half of the crumpets with a little mozzarella, then sandwich together the remaining crumpets.
3. Cut the crumpets in half and scatter in an ovenproof dish - there is no art to it, so organise it however you like.
4. Top with the remaining mozzarella, and air-fry at 180C for 8 minutes.
