Gok's store cupboard Singapore noodles
An easy way to make dried noodles from the cupboard and whatever veg or leftover meat you have in the fridge taste delicious - these are Gok's delicious Singapore style noodles!
Store cupboard Singapore noodles
Serves: 2
Ingredients
1 - 2 nests of noodles (you can use whatever noodles you may have - dried egg and vermicelli noodles work well)
Vegetable oil, for frying
½ medium onion, cut into strips
½ red pepper, deseeded and cut into strips
2 spring onions, cut into julienne
½ carrot, cut into julienne
Handful of mange tout, cut into julienne
2 cloves of garlic, minced
1 tbsp medium curry powder
2 eggs, beaten
Light soy sauce
Pinch sugar
Fish sauce (optional, if you have it in cupboard)
Red chilli (optional, if you have it in the cupboard)
Shaoxing rice wine or dry sherry (optional, if you have it in the cupboard)
To serve
Salt and white pepper
Dash sesame oil
½ lime (optional)
Shredded cooked chicken to serve (optional)
Method
Cook the noodles according to packet instructions and leave to one side
Fry the white onions in a little oil until soft. Add the pepper, spring onions, carrot, mange tout, garlic and curry powder and fry until soft - you may need to add a little water to stop the curry powder from drying.
Add the eggs and mix thoroughly to scramble
Add soy, sugar and the following if you have them - Shaoxing rice wine, fish sauce and red chilli, and finally your noodles. Stir fry until all mixed in, again you may need a little water to stop it from drying out. Season with salt, pepper, sesame oil and a squeeze of fresh lime.
If you like you can serve this with some shredded cooked chicken, added at the end
