Spam, Spam, Spam! 👩‍🍳

As it’s recently been announced that sales of Spam reached an all-time record last year in the UK, self-confessed ‘Spam-aholic’ Phil Vickery is in the kitchen with some ideas on how to include this cupboard staple into your meal. He’ll be showing us his one-pot spam rice, and spam fritters with pickled red onion, perfect for your lunch or family dinner.

Spam & Pea One-Pot Rice

Serves: 4

Ingredients

3 tbsp olive oil

2 small onions, very finely chopped

200g long grain rice

1 x 200g can Spam, finely chopped

About 400ml  boiling water (or double the volume of water to rice)

2 x chicken Oxo cubes, crushed

200g frozen peas

200g frozen broad beans

2 medium courgettes, diced 

*Salt taste and lots of pepper 

1 tbsp cold cubed salted butter

Method

1.    Preheat the oven to 200C gas 6.

2.    Heat 3 tbsp of oil and add the onion, cook for 2 minutes.  Add the rice and coat well in the oil and onions, then add the Spam.

3.    Add the boiling water to just cover the meat and rice. Sprinkle in the Oxo cubes, stir and bring back to the boil. 

4. Add the Courgettes,  beans and peas.  Place the lid on then cook in the oven for 14 minutes.

5.   Once cooked, stir well and add the butter, re-season and leave to rest, covered, for 5 minutes. Serve.

Potato Spam Onion Scallops

Serves: 4

Ingredients

2 red onions, very thinly sliced

200mls red wine vinegar

2 tsp castor sugar

Vegetable oil, for deep frying 

8 large cooked Jersey royal potatoes, cooked and cold

1 small onion, peeled very finely sliced leaving the root on so they don’t fall apart

200g can spam, sliced very thinly

300g self raising flour

150-200mls sparkling water 

Salt and ground pepper

Method

1.    Cut the onions as thinly as possible and place in a bowl. Add the vinegar and sugar and really mix well. Leave for 1 hour minimum, stirring occasionally.

2.    Meanwhile heat a large pan or wok a third full with vegetable oil and heat to 175C.

3.    Mix the flour and water until you have the consistency of thick cream.

4.    Slice the potatoes lengthways into 5mm thick slices. Place a slice of potato on a board, top with a thin slice of onion and then a slice of Spam. Top with another slice of potato, and press together slightly.

5.    Dust with a little flour, then into the batter. Deep fry immediately until crisp and nicely coloured.

6.    Drain well and sprinkle with a little salt. Serve with a few slices of pickled onions.
