Phil Vickery's VE Day scones

Scones
Serves: makes 6- 8
Ingredients
150g plain flour
100g strong white flour
40g salted butter
20g baking powder
70g castor sugar
150ml buttermilk
Beaten egg or milk, to glaze
Clotted cream and jam to serve
Method
Preheat the oven to 200°C, fan 180C, gas 6. Grease a baking sheet.
Rub the flours, butter and baking powder together until you have fine breadcrumbs, then add the sugar
Gradually add the buttermilk, the mixture should be soft. Remove from the bowl and bring together.
Roll out the dough to about 2cm thick, and then use a 7cm cutter to cut out the scones. Place on the baking sheet, spacing well apart, then cover lightly with cling film and leave for 15 minutes in a warm place.
After this time remove the film, brush the scones with milk or beaten egg and bake for 12 - 14 minutes, or until well risen and light brown. Cool on a wire rack.
To serve, split the scones open and fill with clotted cream and jam
