A Green Smoothie – Breakfast
Serves: 1
Ingredients
½ avocado½ cucumber1 small handful washed spinach & kale (stalks removed)½ fennel or 2 stalks of celery1 bunch fresh parsley1 lime, peeled2 tbsp chia seeds½ litre coconut water
Method
Blend all of the ingredients in a jug blender until combined and serve immediately.
Salad in a mason jar (in layers)

Ingredients
VEGETABLES: Gem, rocket or lambs lettuce (any lettuce leaves, mixed and chopped)Small handful Cherry tomatoes, cut into ¼¼ Red onion, shredded¼ Red cabbage, shreddedCarrot, shreddedFresh peasA handful cooked & shredded chicken or poached & flaked fish (i.e. salmon or mackerel OR boiled eggs)Fresh apple or mango or pearA wedge of lime or lemonA pot of olive oil and apple cider vinegar
Method
Take a clean mason jar and layer the ingredients on top of each other, start with the vegetables at the base. Then layer the protein on top followed by the fruit. You can then flavour the salad with the dressing.

Creamy Crab “Linguini” – Dinner
Serves: Serves 2 (generously)
Ingredients
2 cloves garlic, finely chopped1 fennel, very finely shreddedsplash of olive oil2 courgettes, washed, halved and turned into short “zoodles” (you will need a spiralizer for this, alternatively you could use a vegetable peeler to make thin strips of courgette)½ glass white wine (optional)200 g Fresh white crab meat1 avocado, cut into thin stripsFresh chilli, finely diced (or dried chilli flakes if you prefer)Juice of one limeSea salt to taste
Method
Heat a frying pan over a medium heat. Add the garlic, fennel and olive oil. Sauté for a few minutes to soften (not brown) then add the “zoodles” and wine (if adding) and cook for a few minutes to soften.
Finally stir in the crab and avocado and then serve garnish with the chilli, lime juice and a little salt to taste.
