Raise a glass for the king with these coronation cocktails!
Meet the Rover’s newest barmaid, Helen McGinn! Our drinks expert has set up shop behind the bar (of course) with a selection of coronation cocktails, perfect for sharing and celebrating tomorrow’s big day. We join her, and current Landlady of the Rovers Return, Corrie star Sally Ann Matthews, for a coronation tipple.
Strawberry mojito
The perfect party cocktail using fresh British strawberries
Method: Put the strawberries, chopped limes and sugar in a large jug and muddle them together with a muddler or the end of a rolling pin. Pick the mint leaves, give them a gentle rub and drop them in too. Add plenty of ice and pour over the rum before topping up with sparkling water to taste. Serve in tall Collins glasses.
White sangria
Made using English white wine, the perfect base for the summery take on Sangria
Method: Chop and slice the fruit and put it into a jug along with the mint, elderflower cordial and plenty of ice. Pour in the bottle of chilled white wine and top up with soda water to taste. Serve immediately in big wine glasses or highballs.
G&tea
An ode to the royal love of tea - and gin!
Method: To make the sugar syrup mix 1:1 sugar & water and heat until sugar dissolves then leave to cool. Make the tea either using one mint teabag or make with fresh mint and strain. Again, leave to cool. Put plenty of ice into a jug and pour in all the ingredients. Add sprigs of fresh mint to jug and serve in small tumblers or teacups.
Kir royale
This one isn't a pitcher as sparkling wine works better straight into glasses rather than a jug but it's only two ingredients so it's really simple to make.
Method: Pour 15ml of the cassis (about a tablespoon) into a chilled flute or coupe and top up with the chilled sparkling wine. Garnish with a frozen blackberry and serve.
Sakura paloma
Alcohol free option based on a Paloma cocktail (think tequila and grapefruit)! A pre-bottled blend of Everleaf Mountain (a non-alcoholic botanical drink), lime and grapefruit with notes of strawberry, cherry blossom and rosehip.
Method: Pour the bottle of Sakura Paloma into a jug over plenty of ice. Top up with soda water and wedges of grapefruit. Serve in small tumblers.
