John Torode's pick-me-up breakfast
John Torode’s back from his Sri Lankan adventure, and ready to kick-start your hump day. He’ll be treating Phillip and Holly to a pick-me-up breakfast, and serving them his legendary Bloody Mary!
Bloody Mary
Serves: 2
Ingredients
Lots of ice!
2 shakes of celery salt
Couple of grinds of black pepper
4-6 drops of Tabasco sauce
Juice of ½ lemon
2 tsp Worcestershire sauce
½ teaspoon grated fresh horseradish or 2 tsp horseradish sauce
200ml vodka
600ml tomato juice
Method
Fill a jug with lots of ice and season with a pinch of salt, celery salt and pepper
Add the rest of the ingredients except for the vodka and tomato juice and stir it all
Pour in the vodka, stir again and top with the tomato juice. Float a little extra vodka on top. Cheeky!
John’s corncake’s and smashed avo
Serves: 6
Ingredients
For the corncakes
1 x 375g tin of sweetcorn (drained)
1 x 375g tin of creamed corn
270g self raising flour
1tsp paprika
1tsp salt
1tsp bicarbonate of soda
2 eggs beaten
175mls full fat milk
50grs butter melted
Fresh ground black pepper
10 slices smoked streaky bacon
10mls olive oil
For John’s smashed avo
2-3 Large Ripe Avocados
half a lemon juiced
1 lime juiced
2 drops of Tabasco
Salt and pepper
Method
For the corncakes
Melt the butter and mix with the eggs and the milk, add both lots of the corn
Now mix together all the dry ingredients and season well
Put the two mixes together and stir so there are no flour lumps , it won't take long
Put the frying pan over a medium heat, add the oil and the bacon, cook the bacon for a couple of minutes so some is a little crispy but some is not, I like the different textures.
Take the bacon from the pan and keep the oil, this is to fry the corn fritters
I use a tablespoon of mix for each one, simply spooning a few fritters into the pan at a time depending on who big the pan is
Cook until they puff up, make sure the pan is not too hot, isn’t smoking and doesn’t smell of burning
Turn them when the edges are brown, cook for another minute of so and repeat until they are all cooked
You can keep them warm in the oven
For the smashed avo
You cannot smash an unripe avocado!
Cut the avocados in half lengthwise, and all the way around the seed, using a large spoon, scoop out the flesh and keep one seed.
Using a fork, mash the flesh very well and then add the juices and the seasonings, store with the seed in the mix and covered well with plastic wrap so it doesn’t go grey
