Bramley apple pie
Serves: 8
Ingredients
For the apple pie:
50g unsalted butter
5 large Bramley cooking apples, peeled and roughly chopped, not too small
2 tbsp soft brown sugar
1 lemon, juice and zest, finely grated
1 tbsp cornflour or arrowroot
500g sweet shortcrust ready -prepared pastry
1 lightly beaten egg
Granulated sugar, to sprinkle
Method
1. Preheat the oven to 190℃, gas 5.
2. Place the butter in a large saucepan and melt.
3. Add the chopped apples, brown sugar, lemon juice and zest and cook for 5 minutes or until they start to break down, then tip into a bowl and cool. Taste and add more brown sugar if needed.
4. Add the cornflour or arrowroot once cooled and mix well.
5. Roll out ¾ of the pastry on a lightly floured worktop into a circle slightly larger than the cake tin.
6. Use to line the base and sides of a 23cm loose-bottomed cake tin, pressing it down lightly. Repeat rolling out the remaining pastry to make a lid, slightly larger than the tin, set aside.
7. Add the apple pie filling to the tin, filling up to the top of the tin.
8. Lightly egg wash the top of the pastry edge.
9. Top with the remaining pastry circle to make a lid.
10. Using your thumb, press the edges together and crimp decoratively.
11. Use a small knife to make a couple of slits in the pastry lid.
12. Brush the top with egg wash and sprinkle with granulated sugar, then place onto a baking tray into the preheated oven.
13. Bake for 35-40 minutes or until golden brown.
14. Cool slightly and remove from the tin before cutting into slices. Serve with ice cream, cream or custard.
