Phil Vickery's Yorkshire curd tart
In the fourth instalment of our British tart cookery series, Phil Vickery heads to Whitby where he’s putting his twist on a classic Yorkshire curd.
Yorkshire curd tart
Preparation time: 20 minutes
Cooking time: 35-40 minutes
Serves: 4-6
Ingredients
300g cottage cheese
125g unrefined castor sugar
Finely grated zest of 2 large lemons
100g ground almonds
3 medium eggs
100g raisins, soaked in tea overnight
4 tbsp brandy
1 x 25cm cooked sweet shortcrust pastry tart
Icing sugar for dusting over
Method
1. Preheat the oven to 190°C gas 5
2. Push the cottage cheese through a sieve, then into a bowl
3. Add the sugar, lemon rind and almonds and mix well
4. Next add the eggs, raisins and brandy and mix well
5. Spoon into the tart and spread out evenly
6. Bake in the pre heated oven until just set, do not overcook
7. Cool and dust heavily with icing sugar, then serve with thick pouring cream
