Phil Vickery’s ultimate steak sandwich
Get your chops around this! Tender slices of beef, caramelised onion, garlic aioli, mustard, lettuce and tomato. This ultimate steak sandwich is fantastic for a quick midweek meal or weekend treat.
Phil's steak sandwich

Ingredients
For the sauce
100g cooking chorizo, very finely chopped
1 small onion, very finely chopped
200ml single cream
150g smoked processed cheese, small cubes
100g Monterey Jack cheddar, small cubes
Ground pepper
For the relish
2 tbsp olive oil
1 small onion, very finely chopped
1 clove garlic, finely chopped
1 small green pepper, very finely chopped
1 tbsp pickled jarred green jalapeños, finely chopped
1 large lime, juiced and zested
4 tbsp chopped fresh coriander
2-3 tbsp extra virgin olive oil
Salt and ground pepper
4-6 heaped tbsp roughly crushed tortilla chips
4 x 1cm steaks cut from a sirloin, 150g each roughly

4 tbsp mayo
4 large ciabatta rolls, sliced and toasted on the inside a little
Method
1. First make the sauce. Place the chorizo and onion in a pan and add a touch of water, bring to a simmer and then once the water has evaporated, let the chorizo gently cook until the oils come out, then colour slightly.
2. Next add the cream and bring to a simmer, then add the cheeses and ground pepper and stir over a low heat to melt and cook until you have a lovely cheese dressing, keep warm and covered.
3. Next, heat the oil for the relish and add the onion, garlic and green pepper and sauté over a high heat.
4. Cool and then add the jalapeños, lime zest and juice, coriander, extra virgin olive oil, salt and pepper and really mix well. Do not add the crushed tortilla chips until you’re about to serve.
5. Heat a frying pan and add a little oil.
6. Season the steaks with a little salt and pepper and quickly saut over a high heat until you have the desired cook.
7. Spread the roll with a little mayo, add the steak, add the tortilla chips to the relish and spoon over the steak.
8. Finally the cheese sauce and serve asap.
