Phil Vickery's one pan full English breakfast
Phil’s kickstarting our weekend by showing us how to make a full English breakfast in one pan - less washing up but all the tasty flavours of a traditional fry up!
Phil Vickery’s brunch tortilla
Serves: 4
Ingredients
1 tbsp olive oil
1 small onion, peeled and chopped
150g smoked streaky bacon, chopped
2 large sausages, cut into 4 pieces
4 hash browns, cut into 4 pieces
2-3 tbsp cubed black pudding
10 cherry tomatoes, halved
5-6 medium eggs
4 tbsp chopped chives
Ground black pepper
Method
1. Preheat the oven to 180C, fan 160, gas 4.
2. Heat the oil in a 24cm non-stick ovenproof frying pan,
3. Add the chopped onion, bacon and sausages to the pan. Cook over medium heat for about 5-6 minutes until they start to get some colour.
4. Add the hash browns and cubed black pudding to the pan. Continue cooking for another 2 minutes until they start to crisp up and the sausages are cooked through. Mix in the cherry tomatoes.
5. In a separate bowl, beat the eggs and season them with ground black pepper and chopped chives. Pour the beaten eggs over the potato mixture in the frying pan.
6. Cook the mixture over low heat for a few minutes until the eggs begin to set at the bottom and the sides.
7. Once the bottom and sides are set, place the frying pan in the oven and cook for about 10-15 minutes, or until the tortilla is set and golden brown on top.
8. Run a spatula around the edge of the pan to loosen the tortilla, place a large plate over the pan then carefully invert the pan to release the tortilla.
9. Cut the tortilla into wedges and serve.
