Phil Vickery's lamb burgers
Phil's island hop adventure continues as he tours the wilds of Shetland. This time he's revving up his classic motor to travel into the countryside and catch up with some icons of the islands.
He’ll then be firing up his camping stove on the side of a loch to cook up a lamb burger - Shetland style - using local ingredients.
Lamb burgers
Serves 4
Ingredients
4 bannocks
1 onion, chopped
2tsp dried mint
1tsp garlic granules
Salt and pepper, to season
400g shetland mince lamb
150g wild garlic, roughly chopped
Method
1. Sweat off the onion in a frying pan over a medium heat, then add the dried mint and garlic and stir through.
2. Transfer to a bowl and mix in with the minced meat. Then add the wild garlic and mix through, seasoning with salt and pepper to taste.
3. Create patties with your hands then return to the same frying pan. Cook the patties for roughly 4-5 minutes on one side, then turn and cook for another 4-5 minutes.
4. Slice the bannock in half, and add to the frying pan to soak up the juice, then serve the patty in the bread.
