Christmas leftovers pie
Serves: 6-8
Ingredients
150g stuffing, roughly broken up250g cooked turkey, roughly pulled apart 100g pigs in blankets, roughly chopped 300g roast potatoes, chopped 100g peas300g cooked parsnips, carrots, brussel sprouts 2 pints thick turkey or chicken gravy1 x 500g shortcrust pastry1 egg, beatenSalt and freshly ground pepperPickled red cabbage, to serve
Method
1. Preheat the oven to 200℃.
2. Place all the ingredients into a large bowl and combine. Pour over enough gravy to coat well, then mix. Spoon into a deep oval dish (27cm x 6.5cm).
3. Roll out the pastry and cut it to fit your dish, using a pastry brush to egg wash the border of the pastry. Egg wash the edge of the pie, and using the trimmings, create a rim of pastry, before laying over the pastry sheet. Press down well and decorate the edge.
4. Brush the top of the pastry with more beaten egg, and then make 2-3 slits in the top of the pastry. Bake for 35-40 minutes.
5. Serve with pickled red cabbage.
