Phil Vickery's Bumper Blueberries 🫐
The hot weather has ripened an abundance of fruit ready for picking, so we’ve sent Phil Vickery down to Dorset this morning to make the most of the bumper blueberry crop. He’ll be soaking up the sunshine,as he makes his delicious blueberry cakes - which Phil calls Blueberry Finger Diggles!
Phil’s Mum’s Blueberry Finger Diggles
Serves: 4-6
Ingredients:
200g fresh blueberries
225g self raising flour
85g margarine
85g caster sugar
1 medium egg, beaten
200 ml crème fraiche
1 tsp vanilla extract
2-3 tbsp icing sugar
finely grated zest and juice from 1 small lemon
Method
1. Preheat the oven to 200°C, gas 6.
2. Rub the margarine into the flour then add the egg and mix well.
3. Next, add in the sugar and mix.
4. Form into balls the size of a large walnut.
5. Place on grease proofed paper baking tray leaving a good gap in between, press down slightly.
6. Make a hole in the top with the end of a wooden spoon, then drop in a few blueberries.
7. Carefully bake for 10 minutes, they will spread slightly, so be aware, probably best to bake on silicone paper.
8. Remove the tray and leave to cool before trying to lift off.
9. Mix the crème fraiche with the vanilla, icing sugar and zest.
10. Spoon onto the ‘diggles’ and add a squeeze of lemon just before eating.
