Phil Vickery's Bacon, Onion & Potato Quiche

Bacon, Onion & Potato Quiche
Serves: 6-8 persons
Ingredients
2 tbsp oil
4 rashers back bacon, cut into very small pieces
2 onions, peeled and finely chopped
24cm x 4cm shortcrust pastry case, blind baked brushed with egg to seal
350g cooked potatoes, cut into small cubes
2 tbsp fresh parsley, roughly chopped
150g Gruyere or Emmental cheese, finely grated
4 medium eggs
400 ml milk, boiled and cooled for 10 minutes
A pinch of nutmeg
Salt and freshly ground black pepper
Dressed green salad to serve
Method
1. Preheat the oven to 180°C, Gas 4
2. Heat the oil and add the bacon and cook for 10 minutes, then add the onions and cook for a further 5 minutes
3. Spread the onions and bacon over the base of the pastry case, and then sprinkle over the cooked cubed potatoes
4. Sprinkle over the parsley then top with half the cheese
5. Gently whisk the eggs with the hot milk, nutmeg and season with salt and pepper
6. Pour over half the egg custard, but only half fill the pastry case
7. Place the pastry case on a baking tray then place in the oven, fill up the pastry case to the top now it's placed in the oven. This way, you do not get any spillage. Top with the rest of the cheese.
8. Bake for 25-30 minutes, do not soufflé
