Phil Vickery’s air fryer New Year masterpiece

Air fryer New Year masterpiece
Serves: 4
Ingredients
50g softened butter200ml full fat milk150ml double cream2 medium eggs and 2 egg yolksZest of 1 large orange50g caster sugar3 tbs blood orange marmalade25g milk chocolate, chopped25g dark chocolate, chopped300g chocolate panettone, sliced thinly
Method
1. Brush the butter all over the individual ramekins. Warm the marmalade gently in a microwave for 20 seconds.
2. To make the custard, warm the milk, cream and sugar gently in a pan until all the sugar has dissolved. Whisk in the marmalade and orange zest, then finally whisk in the egg and egg yolks.
3. Layer the panettone slices into the dishes. Ladle in the custard mix, taking your time as the custard will need to soak into the panettone. All the custard mix should be used up. Sprinkle over the chocolate.
4. Pop a loaf tin liner into the air fryer, then place the dishes on top. Set the airfryer to bake at 180℃ and cook for 10 to 12 minutes (the centre should have a little wobble). Leave to cool slightly.
5. Serve warm with cream.
