With online searches for oats rocketing by 95% in the last two weeks and TikTok turning a baked-oats recipe viral, we're in the kitchen today with Phil Vickery as he road-tests this versatile breakfast recipe.
Take classic porridge oats plus a few extra ingredients and pop them into the oven for a fun, guilt-free dish that can be enjoyed as breakfast, elevenses, or an afternoon snack!
Basic overnight oats
Serves: 2
Ingredients
1 small cup rolled oats (50g)1 small cup any milk (150mls)3-4 tbsp water1 tbsp runny honey
Method
1. Mix all the ingredients together really well. Spoon into glasses, cover and chill in the fridge overnight.
Raspberry, apple and blueberry overnight oats
Serves: 2
Ingredients
1 quantity basic oats recipe1 tbsp chia seeds100g frozen raspberries1 small apple100g fresh or frozen blueberries
Method
1. Make up the basic mix and stir in the chia seeds
2. Spoon a little into each glass, then add the raspberries
3. Top with another spoonful of the oat mixture, then add the gated apple
4. Finally, add the last of the mixture. Cover the glasses and chill overnight.
5. Top with the blueberries just before serving
Carrot cake overnight oats
Serves: 2
Ingredients
1 quantity basic oats recipe1 small carrot finely grated½ tsp cinnamonFinely grated zest 1 small lemon2-3 tbsp roasted chopped hazelnuts
Method
1. Make up the basic mix
2. Stir in the finely grated carrot, cinnamon and lemon zest and mix well. Divide between two glasses, cover and chill overnight.
3. Just before serving stir through the hazelnuts and top with a few more, then add a little grated carrot
Baked banana honey oats
Serves: 2
Ingredients
150g rolled oats½ tsp baking powder2 bananas, peeled and mashed175ml any milk2 tbsp runny honey1 large egg
For the topping
Greek yoghurtBanana chipsCoconut flakes
Method
1. Preheat the oven to 190C, fan 180C, gas 4. Grease two 10cm x 6cm deep ramekins.
2. Place the oats in a blender with the baking powder, banana, milk, honey and egg and blitz until smooth
3. Divide between the ramekins and bake in the oven for 15 – 20 minutes, or until risen and just cooked through
4. Cool slightly before eating, then add the toppings
Baked chocolate oats
Serves: 2
Ingredients
150g rolled oats½ tsp baking powder2 tbsp cocoa powder175ml any milk2 tbsp runny honey1 large egg50g chocolate chips2 tbsp Nutella
Method
1. Preheat the oven to 190C, fan 180C, gas 4. Grease two 10cm x 6cm deep ramekins.
2. Place the oats in a blender with the baking powder, cocoa, milk, honey and egg and blitz until smooth. Add the chocolate chips and stir through.
3. Place 1 tbsp in the base of each ramekin, then pour the chocolate mixture over the top. Bake in the oven for 15 – 20 minutes, or until risen and just cooked through.
4. Cool slightly before eating
Baked oats with sweet potato, bacon and honey
Serves: 6 - 8
Ingredients
8 rashers streaky bacon1 tbsp any oil1 sweet potato, peeled and cut into ½ cm pieces150g rolled oats½ tsp baking powder200mls any milk2 tbsp runny honey
Method
1. Preheat the oven to 180C gas 6. Line a 20cm square baking tin with parchment.
2. Place a frying oan over a low heat. Add the bacon and sweet potato, cover and cook for about 10 minutes, or until soft.
3. Place the oats in a bowl, add the baking powder and mix well.
4. Once the sweet potato is cooked, spoon onto a plate, then gently mash with a fork. Mix together with the milk, honey and egg.
5. Stir into the oats and mix really well. Spoon into the lined tin baking tray. Spoon over the bacon pieces and gently press in.
6. Bake for 20 minutes or until nicely browned and slightly puffed
